“Apricot cake with jam and fruit – a favorite in the summer”
INGREDIENTS
- eggs – 3 pcs.
- soft butter – 5.3 oz (150 g)
- fresh lemon juice – 1 tbsp (15 ml)
- apricots – 6 pcs. (fresh or dried)
- vanilla – 2 pcs. (0.4 g)
- flour – 8 oz (225 g)
- baking powder – 2 tsp (10 g)
- salt – 1/4 tsp.
- milk – 2.5 fl oz (75 ml)
- sugar – 5 oz (140 g)
- TOPPING
- honey – 1.4 oz (40 g)
- apricot jam
- water – 2 tbsp.
- butter – 3.2 oz (90 g)
HOW TO COOK
Stir the lemon juice and the milk. Leave the mixture for five minutes. Beat the sugar and butter, until a creamy mixture is obtained. Add the eggs one after the other.
Add the milk. Sift the baking powder and flour, vanilla and salt. Stir with a spatula. Add the finely chopped apricots.
Pour the apricot cake mixture into a greased and floured baking pan.
Bake the delicious fruit cake for 35 minutes at 360°F (180°C).
Melt the honey, butter and apricot jam with a little water. Stir over low heat at all times.
Leave it to cool and pierce the cake with a small skewer and pour the mixture over it. Leave the fruit cake for 2 hours.
After that you can eat the spectacular cake with apricots and jam.
