Chicken Alfredo Soup

Inspired by the most popular pasta dish, this creamy Alfredo Chicken Soup is quick and easy to prepare with a few quick commercial products. Starring rotisserie chicken, frozen peas, and a jar of Alfredo sauce, this pot is a very comforting soup with minimal messy preparation. This convenience and a recipe that is guaranteed to please the kids make this the perfect soup for busy weeknights. While this soup is delicious and satisfying, it is surprising that it is not overly heavy or over right. We used Gia Russa brand sauces, but feel free to use your own favorites. Served with crusty bread, a green salad, and a glass of white wine, this easy soup is the perfect dinner on a cold day.

Preparation.

  • In a medium bowl, season chicken with salt and pepper and toss to coat.
  • Heat olive oil in a large Dutch oven or heavy bottomed pot over medium heat until shimmering. Cook chicken in batches, turning halfway through, until lightly browned on all sides, 5 to 6 minutes per side. If the pan seems dry, add more olive oil halfway through cooking. Remove chicken from pan and set aside.
  • Reduce heat to medium and add butter. Once melted, add the parsley. Cook for 2-3 minutes until translucent. Add garlic and cook until fragrant, 1-2 minutes. Add flour and stir to coat with aroma. Cook until flour is cooked through and browned, 1 to 2 minutes.
  • Pour the white wine into the pan and deglaze, scraping up any brown bits from the bottom of the pan. Add chicken broth and season with salt. Reduce heat to medium and bring to a boil. Once boiling, add the spaghetti and cook for 7 minutes. Stir occasionally to prevent the pasta from sticking or clumping to the bottom of the pot.
  • Add chicken and cream and stir to combine. Add Parmesan cheese, 2 to 3 tablespoons at a time, stirring well after each addition to ensure smooth melting of the cheese. Stir in spinach and cook until tender, 1 to 2 minutes. Season to taste with salt and pepper. The soup will thicken slightly as it cools.
  • Pour soup into bowls and serve warm, garnished with additional pepper and parmesan cheese.
