“Apricot cake with jam and fruit – a favorite in the summer”

INGREDIENTS

  • eggs – 3 pcs.
  • soft butter – 5.3 oz (150 g)
  • fresh lemon juice – 1 tbsp (15 ml)
  • apricots – 6 pcs. (fresh or dried)
  • vanilla – 2 pcs. (0.4 g)
  • flour – 8 oz (225 g)
  • baking powder – 2 tsp (10 g)
  • salt – 1/4 tsp.
  • milk – 2.5 fl oz (75 ml)
  • sugar – 5 oz (140 g)
  • TOPPING
  • honey – 1.4 oz (40 g)
  • apricot jam
  • water – 2 tbsp.
  • butter – 3.2 oz (90 g)

HOW TO COOK

Stir the lemon juice and the milk. Leave the mixture for five minutes. Beat the sugar and butter, until a creamy mixture is obtained. Add the eggs one after the other.

Add the milk. Sift the baking powder and flour, vanilla and salt. Stir with a spatula. Add the finely chopped apricots.

Pour the apricot cake mixture into a greased and floured baking pan.

Bake the delicious fruit cake for 35 minutes at 360°F (180°C).

Melt the honey, butter and apricot jam with a little water. Stir over low heat at all times.

Leave it to cool and pierce the cake with a small skewer and pour the mixture over it. Leave the fruit cake for 2 hours.

After that you can eat the spectacular cake with apricots and jam.
