HOW TO MAKE IT :
- Preheat oven to 350 degrees F. Spray a 9×5 inch loaf pan with non-stick cooking spray.
- In a large bowl, whisk together flours, baking powder, baking soda, and salt.
- In a medium bowl, whisk together yogurt, honey, milk, oil, lemon juice, eggs, lemon zest and vanilla extract. Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in shredded coconut.
- Spread batter into prepared loaf pan. Bake for 50-55 minutes, or until toothpick inserted in the center comes out mostly clean.
- Remove to a wire rack to cool. Stir together confectioner’s sugar, milk, and lemon juice until smooth. Spread glaze over the top of cooled bread. Sprinkle with additional toasted coconut and lemon zest.
- Allow glaze to harden and serve.
