LEMON COCONUT YOGURT BREAD

HOW TO MAKE IT :

  1. Preheat oven to 350 degrees F. Spray a 9×5 inch loaf pan with non-stick cooking spray.
  2. In a large bowl, whisk together flours, baking powder, baking soda, and salt.
  3. In a medium bowl, whisk together yogurt, honey, milk, oil, lemon juice, eggs, lemon zest and vanilla extract. Add wet ingredients to dry ingredients and stir until just combined.
  4. Gently fold in shredded coconut.
  5. Spread batter into prepared loaf pan. Bake for 50-55 minutes, or until toothpick inserted in the center comes out mostly clean.
  6. Remove to a wire rack to cool. Stir together confectioner’s sugar, milk, and lemon juice until smooth. Spread glaze over the top of cooled bread. Sprinkle with additional toasted coconut and lemon zest.
  7. Allow glaze to harden and serve.
