Preparation Time: 10 minutes |

Total Time: 10 minutes

Yield: Approximately 16 servings

Method: Mixer

Ingredients:

  • 8 ounces cream cheese
  • 1/2 cup mayonnaise (preferably Duke’s)
  • 1 cup shredded extra-sharp cheddar cheese
  • 1 cup shredded white cheddar cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dry mustard
  • 1/2 teaspoon ground cayenne pepper
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon mirin (optional)
  • 4-ounce jar of diced pimentos, drained
  • Salt and pepper to taste

Instructions:

  1. In a stand mixer with a paddle attachment, blend cream cheese and mayo until the mixture is smooth and creamy.
  2. Add the cheddar cheese, garlic powder, onion powder, dry mustard, cayenne pepper, Worcestershire sauce, and mirin (if using). Beat until all ingredients are well combined.
  3. Gently stir in the diced pimentos.
  4. Season with salt and pepper to your preferred taste.
  5. Refrigerate the spread until 30 minutes before serving.

Notes:

  • For the best texture and flavor, use an electric mixer or a spoon for mixing, avoiding a food processor to maintain the spread’s desired consistency.
  • If pimentos are unavailable, you can substitute roasted red peppers.
  • We recommend using real mayonnaise, such as Duke’s, for the best results.
  • Store any leftover spread in the refrigerator in an airtight container for up to two weeks.
