The proper way to make garlic butter shrimp and cauliflower rice

Not so long ago I was invited to dinner by an old friend of mine who invited other old friends to gather up, catch up, and see each other after almost 2 years without us seeing each other. The night was not that fancy, but it was special, a bunch of friends chatting, catching up and having a good time together. 3 hours into the gathering, the mastermind behind this gathering announced that it was dinner time, everyone sat on the table waiting for the meal to be served. Shortly after, my friend brought the dishes and eventually the dinner. To be quite honest, it looked weird and I had very low expectations, but when I tasted it, OH MY GOD, what in Heaven’s name is this, it was so delicious I couldn’t believe. Fast forward a couple of weeks, I picked the phone and asked my friend for the recipe, and she was kind enough to give it to me.

This meal is so easy to do, I can even do it on a Friday night after a long week at work because it does not take that much time to prepare. So let’s dive right into this, shall we?

First, here are the needed ingredients:

  • 2 tablespoons of fresh chopped parsley
  • 3 tablespoons of unsweetened almond milk
  • 6 tablespoons of organic butter
  • 1/4 cup of shredded organic parmesan cheese
  • An extra-large bag of cooked, peeled and deveined wild-caught shrimp
  • 1 c. frozen cauliflower rice
  • 4 minced garlic cloves
  • In-season vegetables
  • Pepper
  • Salt
