Directions
- Cook the cauliflower rice as prescribed in the instructions, then put it aside and keep it warm
- Rinse the shrimp using clod water and remove the tails
- Melt the butter in a large skillet over medium heat
- Add in the garlic and let it sauté for 3 minutes or until its color becomes golden brown
- Stir lightly to avoid burning
- Add in the vegetables
- Cook for 5 minutes or until it becomes tender
- Add in shrimp and start stirring frequently for 2 minutes or until the shrimp becomes pink
- Add in the rice and mix well until everything is well combined
- Add in the cheese, parsley, pepper, almond milk, and salt
- Start stirring and reduce heat from medium to low
- Remove from heat, spoon everything in a serving dish
- Add in parsley to garnish
- Serve and enjoy.
