I don’t know anyone who doesn’t like fried rice, especially Chinese chicken fried rice! It’s a universal food language that extends all over the world, from carnivores to vegetarians and even vegans. It must be one of my favorite Chinese chicken recipes. Your chicken and rice casserole recipes have taken a new turn!

I think the only people who avoid fried rice like the plague are those on a low-carb diet – and because it’s TOO SOFT, it’s impossible to take a single bite. Am I right or am I right?

YOU DON’T NEED DAY-OLD RICE FOR THAT!
Fried rice is such a convenient fast food that you can prepare it with almost anything, but I think what stops people from preparing it more often is that they don’t have day-old rice on hand. You can cook it fresh, but then you have to spread it out on a tray and put it in the fridge to cool and dry, so suddenly fried rice is not the quick and easy meal it should be.

Also, fried rice alone is usually not a complete meal in one sitting. It’s heavy rice and a few vegetables, like Chinese chicken with lemon.

The recipes for rice and Chinese baked chicken are still too light for my taste, and I would probably serve it with steamed Chinese vegetables, but this dish contains more vegetables than most others. You might like some Chinese chicken dishes that contain more vegetables, like Chinese chicken and stir-fried broccoli.

Can you cook rice with chicken broth?
Of course, you can! In this recipe, we use chicken broth or chicken stock. I love the way the chicken juice drips onto the rice during cooking, which gives the rice even more flavor. The rice is wonderfully moist, not mushy and overcooked, and I think you’ll be surprised how much it tastes like fried rice – this is perhaps one of the best chicken and rice dishes you’ve ever had!
