“We are ready to drink three coffees for an extra piece of this aromatic carrot cake with dates”
INGREDIENTS
- eggs – 2 pcs.
- brown sugar – 1 cup (crystal)
- baking soda – 1 tsp.
- cinnamon – 1 level top tsp.
- sunflower oil – 10 tbsp.
- wholemeal flour – 1 and 1/2 cups
- fine oatmeal – 2 – 3 handfuls
- carrots – 2 – 3 pcs. (1 cup)
- dates – 1 handful of pieces
- dried cranberries – 1 handful
HOW TO COOK
Stir the eggs in a deep bowl using a wire whisk. Then the brown granulated sugar, soda, cinnamon and sunflower oil.
Gradually add the wholemeal flour and fine oatmeal.
Grate the carrots and add them to the rest along with the sliced dates and dried cranberries.
Spread the mixture in a baking pan greased with sunflower oil and sprinkled with flour.
Bake at 360°F (180°C) for about 25-30 minutes, until it is fully baked. Cut it into pieces and serve it with homemade carrot juice!
Incredibly tasty carrot cake – very fluffy! The dates and cranberries further add to the taste, appearance and aroma!
