Recipe for Cinnamon Sugar Donut Muffins

The basic recipe for these muffins is simple, and so are the ingredients used. They can be served straight or with fruit. For this recipe, it is recommended to use all-purpose flour, and room temperature (or melted) dairy flour.

How to store muffins

There are several ways to properly store muffins

  • At room temperature. I usually recommend storing them this way because they taste best at room temperature. I use a large airtight plastic bag or airtight container and store the muffins in a single layer. Some people recommend placing paper towels in the bottom to absorb condensation. This may not be necessary if the muffins are stored until they have cooled properly. However, if I use airtight containers, I often add bread torn in half to fit between the muffins in the container. This is because the bread absorbs the moisture and is best consumed within two to three days.
  • Refrigerate: (In general, the refrigerator dries out baked goods faster, so the average muffin recipe should not be refrigerated.) They will keep for up to five days in a sealable plastic bag or airtight container before refrigerating. To reheat, remove from refrigerator and microwave for 10 seconds, or allow to come to room temperature naturally for 15 minutes.
  • Store in the freezer. Place the cooled muffins in a sealed plastic bag or airtight freezer container and pack as tightly as possible without crushing them. Remove as much air as possible. Label with the date and the name of the recipe.

How to heat frozen muffins

Remove muffins from the freezer and let them sit in the refrigerator overnight or on the counter for 2-3 hours before reaching room temperature.

Ingredients

MUFFINS

  • 2 cups (250 g) all-purpose flour
  • 1 ½ cups (300 g) granulated sugar
  • 2 teaspoons baking powder
  • ½ teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 1 ¼ cups (368 g) whole milk
  • 1 large egg, room temperature
  • 2 tablespoons unsalted butter, melted
  • â–¢ 1 tablespoon vanilla extract

TOPPING

  • 4 tablespoons unsalted butter, melted
  • ¾ cup (150 g) granulated sugar,
  • 1 teaspoon ground cinnamon

Instructions

  • Preheat oven to 350°F.
  • In a large mixing bowl, combine flour, sugar, baking powder, salt and cinnamon.
  • In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
  • Pour the milk mixture into the flour mixture and stir just until no big lumps remain. The batter will be a bit runny.
  • Fill prepared muffin pan about â…” full of batter per spot. For mini muffins bake 12-14 minutes, for full-size muffins, bake 20-24 minutes.
  • Remove from oven and let rest in pan for 5 minutes before placing the muffins on a rack to cool.
  • Once cooled, combine sugar and cinnamon topping. Dip tops of muffins in the melted butter then roll the top in the cinnamon sugar to coat. Place back on the rack and repeat with remaining muffins.
