French Onion Stuffed Potatoes

You could make a simple baked potato, of course. Or you could take all the things that make a good French onion soup – sweet, salty and boiling caramelized onions, gruyère with nuts – and put them in a baked potato to make a much more than simple soup. I think I’ll go for the last one, thank you very much. These baked stuffed potatoes may be a bit much for everyday use, but they are worth the little effort they require. A fluffy potato is a natural companion to a rich, hearty French onion flavor, making it a delicious mashed potato.

Serves 4; 10 minutes prep, 30 minutes cook time

INGREDIENTS :

4 large baked potatoes
4 tablespoons butter
4 onions, halved and thinly sliced
1/2 teaspoon dried thyme
1/2 cup sherry or dry white wine
1 cup beef stock
2 cups Gruyere cheese, grated
Kosher salt and freshly ground black pepper, to taste
