Ingredients:

  • 1 1/2 teaspoons of kosher salt
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon of freshly ground black pepper
  • 2 pounds of chicken wings
  • 1 ounce of finely grated Parmesan cheese (about 1/4 cup), plus extra for serving
  • 2 tablespoons of fresh parsley leaves
  • 3 cloves of garlic
  • 4 tablespoons of unsalted butter

Instructions:

  1. Preheat your oven to 400ºF and position a rack in the middle. Line a rimmed baking sheet with aluminum foil and place a wire rack inside.
  2. In a small bowl, combine 1 1/2 teaspoons of kosher salt, 1 teaspoon of garlic powder, and 1/2 teaspoon of black pepper.
  3. If necessary, prepare the chicken wings by removing the wing tips and separating them into flat and drumette sections using a chef’s knife or kitchen shears.
  4. Pat the wings dry with paper towels and arrange them on the rack in a single layer. Sprinkle the salt mixture evenly over the wings.
  5. Roast the wings in the oven until they are cooked through and the skin reaches a delightful crispiness, typically around 45 to 50 minutes.
  6. While the wings are roasting, finely grate 1 ounce of Parmesan cheese, chop 2 tablespoons of fresh parsley leaves, and mince 3 cloves of garlic. A few minutes before the wings are done, melt 4 tablespoons of unsalted butter. Let it cool slightly, then mix it into the Parmesan mixture.
  7. Toss the cooked wings into the Parmesan mixture until evenly coated. Transfer them to a large plate or platter and, if desired, sprinkle more grated Parmesan on top.
