Maybe it’s because I grew up with an Italian grandmother, but we ate a lot of tomato and cucumber salad when I was a kid. I completely forgot about this recipe until recently, and I’m so glad I stumbled upon it again. In virtually no time, you can whip up a fresh summer salad that’s the perfect accompaniment to any dish. Plus, it’s super healthy. Sounds like a win-win situation to me!
To make marinated tomato and cucumber salad, you will need:
3 large tomatoes cut into large chunks
2-3 peeled cucumbers, sliced thin-medium
1 white (or red) onion, thinly sliced
For the marinade, you will need:
1/3 cup distilled white vinegar
1/3 cup olive oil
1/3 cup water
2 tablespoons of sugar
Salt and pepper to taste
This is quite possibly the simplest recipe of all time. All you have to do is mix together the marinade ingredients, then pour them into a large bowl with the tomatoes, cucumbers, and onion. Give everything a quick toss to ensure all of the vegetables are well coated by the marinade. Cover the bowl and place in the fridge to cool for a couple of hours. When the time’s up, serve and enjoy!
This is such a fresh, healthy side dish to serve alongside grilled meats, fish, or really anything you want! Because this recipe gives you a substantial amount of salad, you can eat it for a couple of days, which is always helpful. Happy cooking, and enjoy!
