Whether we like it or not, winter is upon us. We had our first snow this week, so I’m already in the mood to do some hearty winter cooking. After all, what’s more comforting than curling up on a winter evening with a bowl of steaming, delicious soup? On that note, I’m going to share a very classic recipe with you today that the whole family is sure to love: beef, tomato, and macaroni soup!
Ingredients:
1 pound of lean ground beef
1 cup of diced white or yellow onion
6 cups of beef broth
1 can of diced tomatoes
1 teaspoon of Worcestershire sauce
1 tablespoon of tomato paste
1/2 teaspoon of dried basil
1/2 teaspoon of dried oregano
2 cups of (dry) elbow macaroni
Salt and pepper to taste
Frozen mixed vegetables (optional)
Directions:
Step 1: In a large pot, cook the ground beef and onion until the beef is fully cooked and the onion is soft and translucent.
Step 2: Add the beef broth, diced tomatoes, Worcestershire sauce, tomato paste, dried basil, and dried oregano into the pot. Mix until combined, then bring to a simmer.
Step 3: Once the mixture has been simmering for five to 10 minutes, add in the macaroni. Continue to simmer until the macaroni is cooked (al dente). If you want to add in mixed frozen vegetables, do so at the same time you add in the macaroni.
Step 4: Season with salt and pepper to your preference.
Step 5: Serve topped with shredded Parmesan and a nice, big piece of crusty bread!
