Spicy Steak Fajitas

These fajitas were devoured more quickly than any other of my creations so far – which says a lot because I feel like I’m cooking all the time. And besides, this recipe is very generous, enough to feed 4 to 5 people! We enjoyed them in tortillas on the first day, then transformed them into Chipotle-style fajita bowls for lunch the next day, and there was still a little left! And no, I’m not even complaining. I will definitely make this over and over again in a loop.

Ingredients:

  • 2 pounds of sirloin steak, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 large yellow onion, thinly sliced
  • 1 tablespoon lime juice
  • ½ teaspoon chili powder
  • ⅛ teaspoon cayenne pepper
  • 2 cloves garlic, minced
  • 2 cups shredded Mexican cheese
  • 6 to 8 tortillas

How to prepare spicy steak fajitas:

  1. In a plastic freezer bag, place the sliced steak, spices, lime juice, and olive oil.
  2. Seal the bag, shake it to coat the steak pieces.
  3. Add the peppers and onions to the bag, then close it.
  4. Shake the bag again to coat the vegetables.
  5. Add 1 tablespoon of olive oil to a heated skillet and add the ingredients from the bag to the pan.
  6. Cook until the vegetables are just tender and the steak is cooked.
  7. Serve with warm tortillas, sprinkle with shredded cheese, and your favorite optional toppings.
