These fajitas were devoured more quickly than any other of my creations so far – which says a lot because I feel like I’m cooking all the time. And besides, this recipe is very generous, enough to feed 4 to 5 people! We enjoyed them in tortillas on the first day, then transformed them into Chipotle-style fajita bowls for lunch the next day, and there was still a little left! And no, I’m not even complaining. I will definitely make this over and over again in a loop.
Ingredients:
- 2 pounds of sirloin steak, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 large yellow onion, thinly sliced
- 1 tablespoon lime juice
- ½ teaspoon chili powder
- ⅛ teaspoon cayenne pepper
- 2 cloves garlic, minced
- 2 cups shredded Mexican cheese
- 6 to 8 tortillas
How to prepare spicy steak fajitas:
- In a plastic freezer bag, place the sliced steak, spices, lime juice, and olive oil.
- Seal the bag, shake it to coat the steak pieces.
- Add the peppers and onions to the bag, then close it.
- Shake the bag again to coat the vegetables.
- Add 1 tablespoon of olive oil to a heated skillet and add the ingredients from the bag to the pan.
- Cook until the vegetables are just tender and the steak is cooked.
- Serve with warm tortillas, sprinkle with shredded cheese, and your favorite optional toppings.
