What is a creamsicle?
Before Good Humor and Dairy Queen (creators of the dreamsicle) popularized it, the creamsicle was a sweet cocktail. Made with vodka, cream, orange liqueur and simple syrup, this cocktail can be shaken, stirred and served as a shot or as a float of orange soda and ice cream. But its most famous variant contains no alcohol at all. It is a low-fat vanilla ice cream topped with orange sorbet.

How do you make cream ice cream?
This homemade version requires no complex topping and mixes the two flavors for a very groovy tie-dye effect. The simplest orange sorbet is made by blending frozen orange juice concentrate with vanilla ice cream. For an even more colorful frozen dessert, you can add red and yellow food coloring for a vibrant orange. The remaining vanilla ice cream in the container is the easiest white swirl to make.

Are homemade popsicles made with popsicle molds?
This recipe uses popsicle molds that will fit about ⅓ cup of filling. These molds are very common and make fun popsicles. But if you don’t feel like using popsicle molds, you can also use typical paper cups and wooden sticks.

Ingredients :

  • 1 1 1/2-quart container vanilla ice cream, divided 
  • 1 c. frozen orange juice concentrate
  • Red and yellow food coloring, optional

Directions :

  1. 1In a countertop blender, blend 4 cups of the vanilla ice cream and the orange juice concentrate until well combined. Add red and yellow food coloring, if using. In a medium bowl, place the remaining 2 cups of ice cream and stir until smooth and spreadable.
  2. 2Spoon 1 ½ tablespoons of the orange mixture into the bottom of 20 (⅓-cup) popsicle molds. Spoon 1 tablespoon of the vanilla ice cream into each mold. Alternate adding the orange mixture and vanilla ice cream until the molds are full, to create a marbled effect. Use a butter knife or a popsicle stick to swirl the mixture more, if you like.
  3. 3Place the sticks into the popsicles and freeze until solid, 2 to 4 hours.
  4. 4When ready to eat, run the popsicle molds under warm water and gently wiggle the popsicles out. 
  5. 5Store unmolded popsicles wrapped in plastic wrap or foil for up to 1 month.
