Crust:

The foundation of our Arizona Sunshine Lemon Pie is a perfectly golden, buttery crust that crumbles delicately with every forkful. We start by combining graham cracker crumbs with a hint of granulated sugar for sweetness, and melted butter for richness. This combination creates a base that’s not only sturdy enough to hold our luscious lemon filling but also adds a delightful crunch to every bite.

Filling:

Now, let’s talk about the star of the show – the zesty lemon filling that’s as refreshing as a cool breeze on a hot summer day. We squeeze the juice from fresh, ripe lemons and zest them to capture every ounce of their vibrant flavor. To balance out the tartness, we mix in sweetened condensed milk for creaminess and richness, along with egg yolks for a velvety texture that melts in your mouth. The result? A smooth, silky filling that’s bursting with citrus goodness and sunshine in every spoonful.

Topping:

To top off our Arizona Sunshine Lemon Pie, we whip up a cloud of fluffy, whipped cream that’s as light as a summer breeze. With just a touch of powdered sugar for sweetness, this creamy topping adds a luxurious finish to our already decadent dessert. And for an extra pop of citrus flavor and visual appeal, we garnish the pie with slices of lemon and a sprinkle of zest, like rays of sunshine on a plate.

Instructions:

Take your pie crust out of the freezer or make your own. I used a frozen deep dish pie crust and it worked perfectly. I placed it on a cookie sheet because the metal pan was not that strong but if using a glass pie plate you won’t need to do this.
Preheat your oven to 350 degrees.
Wash your lemon then cut up and remove all the seeds. (Don’t peel it, you will blend the whole lemon!) Place in your high powered blender (such as a Vitamix).
Add the eggs, butter, vanilla, and sugar. Blend until smooth. I started at power 5 then moved up to 10.
Pour the mixture into your piecrust. Bake for about 40 minutes or until set.
Let cool then chill in the fridge.
For the topping:
Place your mixing bowl and beaters in the freezer for about 20 minutes. Add your whipping cream and sugar. Whip till peaks form.
Slice pie and serve chilled with a dollop of the whipped cream on top. This can be enjoyed warm (is just won’t be as firm) or room temperature but we preferred it chilled.
