As a child, my mother knew that her favorite thing in the world was her recipe for roast beef and gravy. It is the most tender meat I have ever tasted. When you take a bite of this meat, it is so tender and succulent at the same time. The beef has probably melted in my mouth, and with the salty sauce, it’s like asking for food heaven. Mom used to make the best mashed potatoes to go with the roast beef and sauce, and she always surprised me. My aunts and friends have their own version of roast beef and salsa, but for me, nothing compares to my mother’s recipe. Of course, I can say that I am a bit biased, but of course, who isn’t when it comes to their mother?

The last time I called her, I asked her when I could visit her or when she and Dad could visit her. She told me it would be a problem for them because Dad is having another gout attack. So I told her that I would visit them in a month. She asked me what I would like her to do for dinner because I knew she would probably arrive during dinner. I didn’t even hesitate. I told him I wanted to eat his roast beef and sauce. Mom just laughed. She knew me so well. After all, I am her only daughter.

Ingredients:
3 lb roast (beef or pork) such as chuck roast
1 pkg dry Italian salad dressing mix
1 pkg dry ranch salad dressing mix
1 pkg dry brown gravy mix
1 c water
