ASSEMBLE THE CAKE

  • Cut the bases of the cake at the desired height with a leveling machine. I made my diapers at the height of 1″
  • Using a baking brush, brush each layer of cake with a generous amount of simple syrup until the layers are well soaked.
  • Place the bottom layer on the cake tray and put the star-shaped cream cheese glaze around the edges, creating a wall, being careful not to leave any space between the glaze and the cake for the pudding to drip off.
  • Place 2 or 3 tablespoons of custard in the center of the bottom layer of the cake and spread it on top to fill the fromage frais icing layer.
  • Cover with chopped banana slices.
  • Place the top layer of the cake on top of the bananas.
  • Cover the top layer with fromage frais glaze, homemade waffles, waffle crumbs, and fresh banana and serve immediately.

To prevent bananas from browning and extend shelf life, lightly sprinkle bananas with lemon, orange, or pineapple juice.
