Blueberry Zucchini Bread

Just when I thought I’d made a variety of quick breads, from banana zucchini with blueberries to carrot zucchini, I realized there was one I hadn’t made. Blueberry zucchini bread, a new way to use two of my favorite ingredients in baking.

This zucchini and blueberry bread recipe is simple, unmixed, quick, perfectly sweet but not too sweet. Each bite contains juicy blueberries, and as an added bonus, adds a delicious aroma to your home. Ingredients :

(3) eggs, lightly beaten
1 cup of vegetable oil
3 tsp vanilla extract
(2 ¼) cups white sugar
2 cups shredded zucchini
(3) cups all-purpose flour
1 tsp salt
1 tsp baking powder
¼ tsp baking soda
1 tbsp ground cinnamon
(1) pint fresh blueberries
