The thing is, you can’t say that you’re having a good day without eating dessert! That’s a must you can’t deny. Today, I’m going to share with you a master piece of delicacy, a last-to-serve dish with so many flavors to add extra joy to your picnic day (or in normal occasions).
Delicious creamy lemon squares would absolutely steal your heart, it’s an easy well-made dessert suitable for all seasons (also great to serve with lemonade or juice in case you had guests), I’ll be happy to share with you all how to perfectly get crispy lemon squares. I’m pretty sure that this recipe will find a place in your cookbook Ladies!
Keep in mind that lemon squares can be saved in the freezer for more than 2 months, that’s a great plus right?
How to section :
To start with, I advise you to only use fresh ingredients in order to get the best results, especially when dealing with desserts; fresh squeezed juice gives the best flavor (but if it wasn’t available, you can use leftover juice or store-bought juice bottles).

What are LEMON SQUARES?
Buttery creamy shortbread crust with a lemon filling with powdered sugar on the top. Delicious combination!
Simple steps:
o Preheat the oven and get your baking dish (or pan) ready
o Mixture all the crust’s ingredients with a wooden spatula in a big bowl
o Make a crust layer (use your hands or a spatula to press)
o Bake the crust for 10 minutes and set aside
o In a separated bowl, combine the lemon layer ingredients, don’t over whisk!
o After the layer is ready, pour it on the crust and bake for 23 minutes or until crispy and browned
o Cool for some minutes in the refrigerator for a couple of hours.
This recipe gets ready in 40 minutes, you only need to combine ingredients together and pour into a baking dish!
So easy, isn’t it?
Ladies, wear your aprons and get ready to bake tasty lemon creamy bars.
Ingredients :
To prepare the crust:
¼ cup of cornstarch
Half teaspoon of salt
Half cup of melted butter
1 cup and 2 tablespoons of all purpose flour
3 tablespoons of powdered sugar
For the Lemon Layer:
3 large eggs cooled in kitchen temperature
3 tablespoons of all purpose flour
1 tablespoon of lemon zest
5 tablespoons of fresh squeezed lemon juice (from 2 to 3 lemons)
1 to half cup of granulated sugar
11/2 tablespoon of buttermilk
½ tablespoon of baking powder
Extras:
Lemon slices on the top
Powdered sugar

Cooking time: 25 minutes
Prep time: 15 minutes
Cooling time: 2 hours
Total time: 2 hours 40 minutes

Important notes:
If you’re out of buttermilk, don’t panic! You may use regular milk or even dismiss it, buttermilk adds a creamy taste but it’s not a must.
If you weren’t a lemon fan, I got good news for you! This recipe can be made with orange, lime, grapefruit or any other flavor you like. Set you creativity free and mixture several flavors (tell me the result in comments).

There are a lot of extras to serve with this dessert, such as:
• Fruits: Plum, coconut, cherry, peach, berries and etc.
• Nuts: Hazelnut, Almond.
• Spirits: Vodka, rum, orange liqueur.
• Cheese: All kinds of cheese would taste great with lemon squares, cut your preferred cheese in small pieces and enjoy!
HOW TO MAKE IT :
Set the oven at 350°F, take your square baking pan (or any other baking pan) and cover with aluminum foil, make sure to cover the corners.
Spray with non-stick cooking spray.
In a big bowl:
Mixture the following ingredients: corn starch, flour, salt and sugar with a spatula for a few seconds.
Add butter and mix for 10 seconds (or until the mixture resembles).
Put the mixture in the pan, press with your hands to form a thin filling; refrigerate for half an hour and bake for 10 minutes.
The topping:
Whisk the eggs, sugar, lemon juice, lemon zest and flour.
Stir and pour over the crust; bake for additional 20-25 minutes.
When ready, cool in kitchen temperature then cover and chill in the refrigerator.
Cut with a sharp knife, form squares and serve!
