To start, discard the seasoning packet that comes with the instant ramen, as we’ll be crafting our own bold flavors. Fear not; it’s still a speedy process! Since this stir-fry moves fast, it’s wise to have your sauce ready and your ingredients prepped. Begin by whisking together the sauce components. While the ingredients aren’t too out of the ordinary, feel free to substitute vegetable oil for sesame and skip the hoisin sauce if needed. Set this sauce aside for now.

Ingredients:

  • 4 tablespoons olive oil
  • 1/2 large white onion, thinly sliced
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 lb lean ground beef
  • 1 red bell pepper, thinly sliced
  • 2 cups diced broccoli florets
  • 3/4 cup carrots, cut into matchsticks
  • 3 packages of instant ramen noodles (discard the seasoning packets)

For the Sauce:

  • 2 teaspoons cornstarch
  • 3 tablespoons light soy sauce
  • 1/3 cup chicken broth
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon light brown sugar
  • 1 tablespoon rice vinegar
  • 2 tablespoons hoisin sauce
  • 2 teaspoons Sriracha sauce (adjust to taste)
  • 1/4 teaspoon black pepper

For Serving:

  • Minced green onions
  • Sesame seeds

Preparation:

  1. In a small bowl, combine the sauce ingredients: cornstarch, soy sauce, chicken broth, sesame oil, brown sugar, rice vinegar, hoisin sauce, Sriracha, and black pepper. Set this sauce aside.
  2. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat. Sauté the sliced onion until it’s soft, which should take about 4-5 minutes.
  3. Reduce the heat to medium, then add ginger and garlic. Stir for about 15 seconds before pushing them to the side of the skillet.
  4. Increase the heat to high, then introduce the ground beef. Allow it to sit undisturbed for 30 seconds, and then break it apart with a spoon or spatula. Continue cooking until it’s no longer pink.
  5. Meanwhile, in a large pot, bring water to a boil. Add the ramen noodles and cook for 1 1/2 minutes less than the package directions suggest. Drain and toss with 1 tablespoon of oil, then set them aside.
  6. Reduce the skillet’s heat to medium-high, add the bell pepper, broccoli, and carrots, and cook until they are crisp-tender, stirring occasionally (approximately 3-4 minutes).
  7. Give the sauce one final stir, then add it to the skillet along with the ramen noodles. Toss everything together with tongs until the sauce thickens and coats all the ingredients, which should take 2-4 minutes.
  8. To serve, garnish with minced green onions and a sprinkle of sesame seeds. Delight in your unique and flavorful creation!
