When I think of meatloaf, I immediately think back to the weeknight dinners of my childhood, when that’s what we were often served. There is something so comforting and nostalgic about meatloaf – in my humble opinion, it ranks right up there with macaroni and cheese. While traditional meatloaf recipes are great, the one we’re going to share with you today puts a modern and unique spin on meatloaf that is sure to be a hit with the whole family.
The BBQ Pit Boys came up with a meatloaf recipe that involves rolling the meatloaf into a log with some added bacon and cheese. But before you picture this meatloaf log going into the oven, they cook it right on the barbecue. Pretty cool, right?
The best part about this recipe is that it doesn’t require a lot of ingredients, making it very quick and easy to prepare (or should I say roll). Put it on the grill for about an hour on low and you’ll have a mouth-watering dinner that kids and adults alike will love.
