They had some variation of this at my grocery store, called smashed potato salad, I’ve also seen it referred to as twice baked potato salad, but in all the deli versions I’ve seen, the potatoes tasted canned, also used dried chives and fake bacon bits, yuck, but inspired me to create this dish. My family just loves it and begs me to make it for every cook out and summer get together!

Ingredients
- 3 lbcooked, diced potatoes, chilled
- 12 ozbacon, cooked and crumbled
- 1 bunchgreen onions, thinly sliced
- 1 pkg(8 oz.) shredded cheddar cheese
- 1/2 tspground pepper
- 1 1/2 tspsalt
- 1 creal mayonnaise
- 16 ozcontainer of sour cream
How to Make Loaded Potato Salad :
- Gently combine ingredients until thoroughly blended together.
- Chill and serve.
