Moist Banana Cake

HOW TO MAKE IT :  

Preheat oven to 160d C.
Grease 2 rectangle baking pans (4”x8”), or you can use a 7” square baking pan. Set aside.
Sift the flour together with baking powder and baking soda, set aside.
Whisk eggs using mixer until foamy, add in sugar gradually and the mashed banana. Whisk using high speed for about 10 minutes, or until ribbon stage.
Then add in the sifted flour in two portions. Use a spatula to mix well. Lastly pour in the corn oil and continue to mix, scrapping the bottom of the mixing pan.
Pour batter into the greased baking pans. Tap gently for a few times on table top to release trapped air bubbles. Then place the banana slices on the top.
Bake for 45 minutes or when a bamboo skewer inserted in the middle of the cake comes out clean, it’s done.
Remove from oven and place on cooling rack.
