  • 1/2 cup of uncooked jasmine rice
  • 2 tablespoons of sun-dried tomato paste
  • 1 14.5-ounce can of diced fire-roasted tomatoes with their flavorful juices
  • 1 cup of vegetable broth
  • 1 1/2 teaspoons of smoky chipotle sauce
  • Shredded Manchego or pepper jack cheese (optional)

Preparation:

In a deep skillet, sauté onions, red bell pepper, garlic, ground beef, cumin, paprika, sea salt, and white pepper with a drizzle of olive oil. Ensure the beef is well browned and break it apart as it cooks.

Add jasmine rice and sun-dried tomato paste, then stir and cook for 3 minutes.

Introduce the canned fire-roasted tomatoes with their juices, vegetable broth, and smoky chipotle sauce. Cover and let it simmer for 20 minutes.

After 20 minutes, uncover and fluff the mixture with a fork. If it seems too liquid or moist for your preference, cook for an additional 2 minutes uncovered.
