This delightful Sweet Onion Casserole brings together the sweetness of onions, the richness of Swiss cheese, and the goodness of rice. A beloved favorite in our household, you can expect enthusiastic compliments every time it graces your table.

Ingredients:

  • ¾ cup of uncooked basmati rice
  • 5 cups of water
  • ¼ cup of butter
  • 3 pounds of sweet onions, roughly chopped
  • 1 cup of half-and-half cream
  • 1 ½ teaspoons of salt
  • 2 cups of shredded Swiss cheese, divided

Instructions:

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish with butter.
  2. In a large saucepan, bring 5 cups of water to a boil, then add the rice. Stir well, reduce the heat to low, and let the rice simmer until it’s half-cooked, which should take approximately 5 minutes. Drain the rice and set it aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onions and sauté them until they become translucent, being careful not to brown them. This should take around 8 minutes. Combine the cooked onions and butter with the partially cooked rice.
  4. Stir in the half-and-half, salt, and 1 ¾ cups of the shredded Swiss cheese into the rice and onion mixture. Transfer this mixture to the prepared baking dish, then sprinkle the remaining ¼ cup of Swiss cheese over the top.
  5. Bake the casserole, uncovered, in the preheated oven until the rice is tender and the top is lightly browned. This should take about 1 hour.
