Swiss Steak Recipe

  • 2-3 tablespoons vegetable oil
  • 1 onion, sliced into half moons
  • 3 carrots, peeled and cut into 1-inch chunks
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups low-sodium beef broth
  • 2 14.5-ounce cans diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon marjoram
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika


  1. Begin by tenderizing the round steak with a meat mallet until it reaches about 1/2 inch thick.
  2. Season the beef generously with salt and pepper on both sides. Dredge the beef in flour, ensuring it’s evenly coated, and shake off any excess.
  3. Heat 1 1/2 tablespoons of vegetable oil in a Dutch oven or heavy stock pot over medium-high heat. Brown the meat on both sides, then transfer it to a plate.
  4. In the same pot, heat the remaining vegetable oil over medium heat. Add the sliced onion and carrot chunks, cooking until the onions are tender, about 5-7 minutes. Reduce the heat to low and add the minced garlic, stirring constantly for 1 minute.
  5. Stir in the tomato paste, beef broth, diced tomatoes, Worcestershire sauce, marjoram, thyme, paprika, and the browned beef. Gently scrape the bottom of the pot to release any flavorful brown bits.
  6. Cover the pot and place it in the oven preheated to 350°F (175°C) for 2 hours, or until the meat is fork-tender.
  7. Season the dish with additional salt and pepper to taste. Serve the Swiss Steak over creamy mashed potatoes, fluffy white rice, or tender Amish egg noodles, generously ladling the meat and sauce over the top.
