Smoky Bourbon Pineapple Glazed Chicken

Ingredients:

  • ¾ cup bourbon or whiskey
  • ¾ cup pineapple juice
  • ½ cup BBQ sauce
  • 4 garlic cloves, minced
  • 2 Tbsp Worcestershire sauce
  • ¼ tsp black pepper
  • 4 chicken breasts

Instructions:

  1. In a bowl, whisk together the bourbon, pineapple juice, BBQ sauce, minced garlic, Worcestershire sauce, and black pepper.
  2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap and refrigerate for a minimum of 24 hours. If you have the luxury of time, go for a 48-hour marinade for an extra flavor punch.
  3. Preheat your grill to medium-high heat (around 375-400°F or 190-200°C).
  4. Remove the chicken from the marinade and let any excess drip off. Grill the chicken for 12 to 15 minutes, turning occasionally, until the internal temperature reaches 165°F (74°C). For extra flavor and a beautiful glaze, brush the chicken with additional BBQ sauce during the last few minutes of grilling.
  5. Once the chicken reaches the desired temperature and has a delightful char, remove it from the grill.
  6. Let the chicken rest for a few minutes before serving, allowing the juices to redistribute.

Notes:

  • If grilling isn’t an option, you can also pan-sear the chicken breasts on both sides for 3 to 4 minutes and then transfer them to a baking sheet. Bake in a preheated oven at 400°F (200°C) for 10 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
