INGREDIENTS :
FOR THE BREAD
- 2 C white whole wheat flour
- 1/2 C all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 C plain yogurt
- 1/2 C honey
- 1/4 C milk of your choice
- 1/4 C melted coconut oil (make sure to measure the coconut oil in the melted state)/olive oil/canola oil
- 3 tbsp fresh lemon juice
- 2 eggs
- 2 tsp fresh lemon zest
- 1 tsp vanilla extract
- 1 C shredded coconut, toasted (sweetened or unsweetened)
FOR THE GLAZE
- 1 C confectioner’s sugar
- 1 tbsp milk
- 1 tsp fresh lemon juice
- 2 tbsp shredded coconut, toasted
- additional lemon zest, optional
