LEMON COCONUT YOGURT BREAD

INGREDIENTS :

FOR THE BREAD

  • 2 C white whole wheat flour
  • 1/2 C all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 C plain yogurt
  • 1/2 C honey
  • 1/4 C milk of your choice
  • 1/4 C melted coconut oil (make sure to measure the coconut oil in the melted state)/olive oil/canola oil
  • 3 tbsp fresh lemon juice
  • 2 eggs
  • 2 tsp fresh lemon zest
  • 1 tsp vanilla extract
  • 1 C shredded coconut, toasted (sweetened or unsweetened)

FOR THE GLAZE

  • 1 C confectioner’s sugar
  • 1 tbsp milk
  • 1 tsp fresh lemon juice
  • 2 tbsp shredded coconut, toasted
  • additional lemon zest, optional
