Blueberry Spinach Breakfast Smoothie

When blueberries and spinach are added to any recipe, you know you’re getting plenty of health benefits, including antioxidants and memory support. Combine these two with oats and a ripe banana rich in vitamins and minerals, and you have a super smoothie. Greek yogurt can be substituted. You can use Greek yogurt instead of sour cream for a healthier alternative.

Can I use frozen blueberries?

We used fresh spinach and fresh blueberries to add more nutrients to this smoothie, but you can also use frozen blueberries in this recipe.

How to Make a Blueberry and Spinach Smoothie

To make this smoothie, first put all the ingredients in a blender.

Next, blend everything together for 45 seconds to 1 minute, starting on low speed and increasing to the highest speed.

Then, serve immediately and enjoy! This batch makes about 4 small plates (8 ounces each). You can taste just a hint of banana in the smoothie, and a little oatmeal flavor, which I love.

Tips for making smoothies.

Know your sweetener I use banana as a sweetener in most smoothie recipes, but you can also add honey, dates, coconut water, coconut sugar, or even cinnamon. If you want to sweeten, add more sweetener of your choice.

Ingredients

  • 3 tablespoons old-fashioned oats
  • 1 cup fresh spinach
  • 1 cup fresh blueberries, or frozen
  • ⅓ cup sour cream*
  • ⅔ cup milk, any kind you have on hand
  • 3 ripe bananas
  • 1 cup crushed ice

Instructions

  • Place all ingredients in a blender and mix for 45 seconds-1 minute.
  • Serve immediately.

Notes

You can omit the sour cream if you’d like! A great substitution is an avocado.
