  • 8 oz cremini or white mushrooms, sliced
  • 1/2 cup dry white wine
  • 1 (18 oz) can of creamy mushroom soup
  • 6 slices of Gruyère cheese
  • 2 tablespoons fresh chives, finely chopped, for garnish
  • Sea salt and freshly ground black pepper, to taste

Preparation:

  1. Begin by preheating your oven to 350°F and have a 9×13-inch baking dish ready.
  2. Season the chicken breasts generously with sea salt and freshly ground black pepper on both sides. Lightly coat them with flour, shaking off any excess.
  3. In a large skillet over medium heat, warm the olive oil. Once hot, sear the chicken until it’s beautifully golden on both sides, but remember it doesn’t need to cook through at this stage, as it will finish cooking in the oven. Transfer the seared chicken to your prepared baking dish.
