This cake is, without a doubt, the best chocolate sheet cake ever made. God bless my mother-in-law who gave me this recipe when I got engaged to her son. Over time, I tweaked it a bit and the result was sinful. It is so moist and richly chocolatey that one bite will make anyone groan and sigh.

Ingredients

FOR THE CAKE

  • 2 c. flour
  • 2 c. sugar
  • 1/4 tsp. salt
  • 4 tbsp. (heaping) cocoa powder
  • 2 sticks butter
  • 1 c. boiling water
  • 1/2 c. buttermilk
  • 2 whole beaten eggs
  • 1 tsp. baking soda
  • 1 tsp. vanilla

FOR THE ICING

  • 1/2 c. finely chopped pecans
  • 1 3/4 sticks butter
  • 4 tbsp. (heaping) cocoa powder 
  • 6 tbsp. milk
  • 1 tsp. vanilla extract
  • 1 lb. (minus 1/2 cup) powdered sugar

Directions

  • 1 Note: I used an 18 x 13 cake mold. In a bowl, combine flour, sugar, and salt. In a saucepan, melt butter. Add cocoa. Stir to combine. Add boiling water and bring to a boil for 30 seconds, then turn off heat. Pour in flour mixture, stirring gently, and allow to cool.
  • 2 In a measuring cup, combine buttermilk, beaten egg, baking soda, and vanilla extract. Fold the buttermilk mixture into the butter-chocolate mixture. Pour into a flat cake pan and bake at 350 degrees for 20 minutes.
  • 3 While cake is baking, make icing. Chop pecans into small pieces. Melt butter in a saucepan, add cocoa and stir to combine. Add milk, vanilla and icing sugar. Stir well. Add pecans, stir to combine, and pour over hot cake.
